What each ingredient does

Gelatin
Sets the liquid into a firm, sliceable jelly as it cools.
Orange juice
Adds the main fruit flavor and most of the liquid in the jelly.
Lemon juice
Adds acidity that brightens the sweetness and balances the flavor.
Sugar
Adds sweetness that balances the acidity of the citrus juices.

The step that matters

Dissolve the soaked gelatin completely. Gelatin only sets evenly when every granule has fully dissolved into the liquid. Undissolved pieces leave gritty specks and weak, soft patches in the finished jelly.

Swap the lemon

How well each one fits the dish's main ingredients (gelatin, orange):

  1. Mangofits about as well
  2. Lemonthe original
  3. Vanillafits about as well
  4. Pineapplefits about as well

Fit is the average pairing score against gelatin, orange. Candidates are from the same food group and used in at least 100 recipes.
