Omelet Stuffed with Strawberries

Ingredients

Directions

Prepare the strawberries

  1. Select 20 of the finest strawberries, cut them into quarters, and place them in a bowl with sugar, orange peel, and rum. Keep in a cool place.

  2. Press the remaining strawberries through a fine sieve to make pulp, sweeten it, and place it on ice.

Make and fill the omelette

  1. In a bowl, beat the eggs with sugar, cream, butter, and salt until well mixed.

  2. Heat butter in a pan, pour in the beaten eggs, and stir with a fork until they thicken.

  3. When the omelet detaches from the pan, fill it with the quartered strawberries (without liquid) and fold it over.

Finish and serve

  1. Shape the omelet nicely, sprinkle with powdered vanilla sugar, and glaze with a hot iron.

  2. Surround the omelet with the strawberry puree, incorporating the liquid from the quartered strawberries.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into a soft, tender structure that holds the omelette together when folded.
Strawberries
Provide the main fruit flavour, moisture and sweetness in the filling and puree.
Sugar
Adds sweetness and helps balance the tartness of the strawberries.
Cream
Adds richness and a softer, moister texture to the beaten eggs.
Rum
Adds aroma and depth of flavour to the macerated strawberries.

The step that matters

Stirring the eggs until they thicken. Egg proteins set with heat, so cooking too long or too hot turns the omelette dry and rubbery, while stopping too early leaves it runny and hard to fold.

Swap the orange

How well each one fits the dish's main ingredients (sugar, rum, egg, cream, butter, vanilla):

  1. Strawberryfits better
  2. Bananafits better
  3. Coconutfits better
  4. Orangethe original

Fit is the average pairing score against sugar, rum, egg, cream, butter, vanilla. Candidates are from the same food group and used in at least 100 recipes.
