Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body and acidic flavour of the soup.
Cornstarch
Thickens the soup when heated with liquid, giving it a smoother body.
Butter
Adds richness and a silky mouthfeel to the finished soup.
Sugar
Balances the acidity of the tomatoes with a touch of sweetness.

The step that matters

Adding the cornstarch slurry. Cornstarch must be mixed with cold water before it goes into the hot soup, because dry starch clumps when added directly. Once it has boiled, the starch swells and thickens the liquid, so it should be stirred in well and given time to cook through.

Swap the tomato

How well each one fits the dish's main ingredients (sugar, pepper, clove, butter):

  1. Capsicumfits better
  2. Carrotfits better
  3. Mustardfits better
  4. Tomatothe original

Fit is the average pairing score against sugar, pepper, clove, butter. Candidates are from the same food group and used in at least 100 recipes.
