What each ingredient does

Potatoes
Break down into a thick, starchy body that gives the soup its creamy texture.
Onions
Add savory aromatic flavor that builds the soup's base.
White sauce
Adds body and richness, thickening the soup and softening its flavor.
Milk
Adds moisture and mild sweetness, keeping the soup smooth and creamy.
Egg yolk
Enriches and thickens the soup when stirred in off the heat.
Cream
Adds fat for richness and a smoother, silkier mouthfeel.

The step that matters

Stir in the egg yolk off the heat. Egg yolk thickens by gently coagulating when heated. If the soup is still boiling when it goes in, the yolk can scramble and curdle, leaving the texture grainy instead of smooth.

Swap the onion

How well each one fits the dish's main ingredients (potato, sauce, milk, egg, cream, pepper):

  2. Asparagusfits better
