Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Provides the main flavour and body of the soup once cooked and sieved.
Milk
Adds creaminess and softens the flavour of the soup.
Butter
Adds richness and fat, carrying flavour through the soup.
Flour
Thickens the soup as it is stirred into the hot butter and liquid.

The step that matters

Adding the flour to the butter. Flour stirred into melted butter forms a roux that thickens the soup smoothly. Adding it to the hot soup without stirring well can leave lumps.

Swap the onion

How well each one fits the dish's main ingredients (celery, milk, butter, flour, pepper):

  1. Carrotfits better
  2. Potatofits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against celery, milk, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
