Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cook macaroni in boiling salted water for 25 minutes. Drain and cool in cold water.

  2. Layer macaroni and oysters in a buttered baking dish.

Make the sauce

  1. Mix oyster liquor with rich milk and thicken with flour mixed in cold milk. Pour over the macaroni and oysters.

Bake and serve

  1. Season with salt and pepper. Top with rolled crackers and bits of butter.

  2. Bake at 350°F (175°C) for 1-2 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Macaroni
Forms the bulk and structure of the dish, holding the layers together.
Oysters
Supply the main flavor and tender texture of the dish.
Rich milk
Makes the sauce creamy and, with flour, thickens it as it bakes.
Flour
Thickens the milk and oyster liquor into a smooth sauce.
Rolled crackers
Form a crisp, browned topping during baking.
Butter
Adds richness and helps the top crumbs brown.

The step that matters

Thickening the sauce. Flour must be mixed into cold milk first so it disperses without lumps; when heated, its starch swells and thickens the liquid evenly into a smooth sauce.
