Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Weigh the eggs and use the same weight in sugar and flour.

  2. Separate the yolks and whites of the eggs into two bowls.

Make the batter

  1. Whisk the yolks and mix in the sugar and grated lemon rind or other flavoring.

  2. Beat the mixture well and fold in the whisked egg whites.

  3. Gradually add the flour while continuing to beat the mixture for 15 minutes.

Bake

  1. Butter a mold, pour in the cake batter, and bake at 350°F (175°C) for 1 to 1.5 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whisked yolks and whites trap air and set the cake's structure as it bakes.
Flour
Forms the gluten network that gives the baked cake its firm crumb and structure.
Pounded loaf sugar
Sweetens the batter and helps the whisked eggs hold their foam.

The step that matters

Gradually add the flour while continuing to beat. Beating after the flour is added develops gluten, and overmixing can toughen the crumb. Adding the flour slowly while keeping the batter light preserves the air from the whisked eggs so the cake rises well.
