Ingredients

Directions

Prepare the creams

  1. Divide the cream in half.

  2. Sweeten ½ of the cream with loaf sugar and stir in enough currant jelly to achieve a fine pink color.

  3. Flavor the remaining cream with lemon juice and beat it to stiff peaks.

  4. Ensure both creams are very sweet.

Assemble

  1. Pour the pink cream mixture into a glass bowl.

  2. Layer the sliced cake in the center, spreading each slice thickly with raspberry jam or marmalade.

  3. Heap the whipped cream over the cake to completely cover it.

What each ingredient does

Rich cream
Whipped into stiff peaks, it forms the light, airy topping that holds its shape.
Loaf sugar
Sweetens the cream, and its dissolved sweetness balances the tart lemon juice.
Lemon juice
Adds acidity that brightens the sweet cream and gives it a fresher flavor.
Sliced almond sponge cake or lady cake
Provides a soft, absorbent base that the jam and cream rest on.
Raspberry jam or marmalade
Adds fruity sweetness and moisture that soaks gently into the cake layers.

The step that matters

Beating the lemon-flavored cream to stiff peaks. Cream whips by trapping air in its fat network as it is beaten. Over-beating turns it grainy and can cause it to separate into butter, while under-beating leaves it too loose to hold its heaped shape over the cake.

Swap the currant

How well each one fits the dish's main ingredients (cream, sugar, almond, raspberry, lemon):

  1. Vanillafits better
  2. Blackberryfits better
  3. Peachfits better
  4. Currantthe original

Fit is the average pairing score against cream, sugar, almond, raspberry, lemon. Candidates are from the same food group and used in at least 100 recipes.
