  2. Flake the fish from the bone and remove all the skin.

  3. Place the flaked fish in a pie dish.

What each ingredient does

Cod
Forms the flaky, tender body of the pie filling.
Oysters
Add briny flavour and moisture that seasons the fish as it cooks.
Melted butter
Adds fat for richness and helps the topping brown.
Mashed potatoes
Form a soft topping that seals the filling and browns in the oven.

The step that matters

Baking until golden brown. The potato topping needs dry oven heat to brown, and the fish must cook through beneath it. Pulling the pie too early leaves the fish underdone and the topping pale.

Swap the potato

How well each one fits the dish's main ingredients (oyster, butter):

  1. Shallotfits about as well
  2. Cucumberfits about as well
  3. Potatothe original
  4. Onionfits less well

Fit is the average pairing score against oyster, butter. Candidates are from the same food group and used in at least 100 recipes.
