What each ingredient does

Rich cream
Whips into the light, stable topping and forms the pink custard base.
Loaf sugar
Sweetens the cream so it tastes balanced against the tart lemon.
Lemon juice
Adds acidity that brightens the cream and helps it thicken as it is beaten.
Currant jelly
Provides color and fruity flavor to the pink cream base.
Sliced almond sponge cake or lady cake
Forms the soft base layer that soaks up flavor and supports the topping.
Raspberry jam or marmalade
Adds sweetness and fruit flavor and moistens the cake layers.

The step that matters

Beating the lemon cream until stiff. Acid from lemon juice helps cream thicken, but overbeating can turn cream grainy and cause it to separate, so stop once it holds firm peaks.

Swap the currant

How well each one fits the dish's main ingredients (cream, sugar, almond, raspberry, lemon):

  1. Vanillafits better
  2. Blackberryfits better
  3. Peachfits better
  4. Currantthe original
