What each ingredient does

Peaches
Provide the fruit, which turns clear and tender as it cooks in the syrup.
White sugar
Forms a thick syrup that preserves the fruit and adds sweetness.
Water
Dissolves the sugar so it can form an even syrup.

The step that matters

Boil the peaches gently. Boiling too hard can break up the fruit and cloud the syrup. Gentle heat lets the peaches soften and clear while keeping their shape.
