What each ingredient does

Gelatine
Sets the liquid so the cream holds its shape when cool.
Egg yolks
Thicken the custard as they heat and add richness.
Egg whites
Whipped, they add lightness and form the meringue topping.
Sugar
Adds sweetness and helps stabilise the beaten egg whites.
Milk
Forms the creamy base that the gelatine and eggs set in.
Lemon juice
Adds acidity that helps keep the beaten egg whites stable.

The step that matters

Cooking the custard until it thickens. Egg yolks thicken as they heat, but too much heat or too little stirring can scramble them into lumps. Keep the heat controlled and stir steadily until the mixture thickens.
