Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Melts and browns to form the caramel, giving the sauce its sweetness and deep flavour.
Cloves
Adds a warm, aromatic spiced flavour to the liquid as it simmers.
Lemon peel
Releases fragrant oils into the liquid, adding a bright aroma.

The step that matters

Browning the caramel over high heat. Sugar goes from amber to burnt within seconds, so stirring steadily and watching the colour keeps the caramel sweet and evenly browned rather than bitter.

Swap the clove

How well each one fits the dish's main ingredients (lemon, sugar):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Marjoramfits better
  4. Clovethe original

Fit is the average pairing score against lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
