What each ingredient does

Clingstone peaches
Provide the fruit, flavor, and texture that the finished canned peaches are valued for.
Granulated sugar
Sweetens the syrup and gives it body, so it coats and flavors the peaches.

The step that matters

Remove the peaches when just tender. Peaches continue to soften with heat, so leaving them in the syrup too long can make them break apart and turn mushy. Testing with a fork helps stop cooking at the right point.
