Apple Butter

Ingredients

Directions

Prepare the pulp

  1. Cut the apples and crab apples into quarters and place them in a preserving kettle.

  2. Barely cover the apples with water and boil until soft.

  3. Strain the mixture through a sieve to obtain the pulp.

Cook the butter

  1. For each pint of pulp, add ⅔ pint of sugar (or 1 pint if the apples are very sour).

  2. Boil the mixture slowly for several hours, stirring almost constantly to prevent burning.

  3. If desired, add cinnamon for flavor.

  4. Once firm, transfer to stone jars or bowls and cover as for jelly.

What each ingredient does

Apples
Provide the pulp that forms the body and bulk of the butter.
Sugar
Sweetens the butter and helps it thicken as the moisture cooks off.

The step that matters

Stirring during the long boil. The pulp is thick and sugary, so it scorches on the bottom of the pan easily. Stirring almost constantly spreads heat evenly and prevents burning while the moisture slowly evaporates.
