What each ingredient does

Oysters
Are the main ingredient, cooked briefly in the hot pickling liquid until just firm.
Vinegar
Provides the acidity that preserves and sharpens the flavour of the pickle.
Salt
Seasons the pickling liquid and helps firm the oysters.
Oyster liquor
Adds the briny, concentrated oyster flavour to the pickling liquid.

The step that matters

Cook over high heat without burning the oysters. Oysters are delicate and overcook quickly, becoming tough and shrunken. Brief cooking in a hot liquid sets their texture, while prolonged heat toughens the protein and dries them out.
