Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flesh, which firms when heated and absorbs the surrounding pickling flavours.
Vinegar
Adds acidity that sharpens the flavour and helps preserve the oysters in the pickle.
Allspice
Contributes warm, aromatic spice notes to the pickling liquid.
Lemon
Adds bright citrus acidity and aroma to the finished oysters.

The step that matters

Removing the scum and straining the pickle. Scum that forms during pickling can spoil the flavour and clarity of the liquid, so skimming it and straining the liquid keeps the pickle clean-tasting.

Swap the mace

How well each one fits the dish's main ingredients (oyster, vinegar, allspice, pepper, lemon):

  1. Marjoramfits better
