  1. Clean the pig's head and wash it well.

  2. Boil the head in very little water with some coarse sea salt until the bones fall from the flesh.

  3. Remove the head from the pot and take out all the bones.

Season and set

  1. Mash the meat with a wooden spoon and return it to the pot.

  2. Add red and black pepper, rubbed sage, and sweet marjoram to taste.

  3. Boil the mixture until it thickens and is nearly dry.

  4. Pour the mixture into pans or forms and smooth the top with the back of a spoon.

  5. Let it cool completely before slicing and serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pig's head
Supplies the meat, skin and connective tissue that give head cheese its body once cooled.
Black pepper
Adds sharp, aromatic heat that seasons the meat throughout the mixture.
Rubbed sage
Contributes earthy, savory aroma that rounds out the flavor of the pork.

The step that matters

Boil the mixture until nearly dry. Reducing the liquid concentrates the flavor and lets the gelatin from the bones and skin set firmly once cooled. Too much liquid left behind leads to a loose, unstable set.

Swap the clove

The recipe marks clove as optional. How well each one fits the dish's main ingredients (pepper, sage, marjoram, mace):

  1. Thymefits better
  2. Winter savoryfits better
  3. Rosemaryfits better
  4. Clovethe original

Fit is the average pairing score against pepper, sage, marjoram, mace. Candidates are from the same food group and used in at least 100 recipes.
