Eggplant

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut the eggplant in half, leaving the rind intact.

  2. Score the flesh deeply, both lengthwise and crosswise, without breaking the skin.

Season and bake

  1. Place each half in a pan with the scored side up.

  2. Season with salt and pepper, then pour sweet oil or melted butter over it.

  3. Bake in a 300°F (150°C) oven until the eggplant is soft and the top is brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the main body of the dish, turning soft and tender as it roasts.
Sweet oil or melted butter
Carries moisture and fat into the scored flesh, helping it brown and taste rich.

The step that matters

Scoring the flesh without breaking the skin. Deep cuts let heat and seasoning reach the inside so it cooks through evenly, while an intact skin keeps the halves holding their shape and the juices contained during roasting.
