What each ingredient does

Small white onions
Provide the main vegetable, softened by brief heat and then flavoured by the pickling liquid.
Spiced vinegar
Supplies the acidity that sharpens the flavour and helps preserve the onions.
Allspice
Adds warm, aromatic spice notes to the pickling liquid.
Mustard seed
Adds a sharp, pungent aroma to the pickling liquid.

The step that matters

Blanch the onions only until they look clear. Brief heat softens the sharp raw bite of the onions. Overcooking makes them soft and mushy, and the vinegar cannot restore a firm texture afterwards.

Swap the mace

How well each one fits the dish's main ingredients (onion, vinegar, allspice, pepper, clove, mustard):

  1. Thymefits better
  2. Tarragonfits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against onion, vinegar, allspice, pepper, clove, mustard. Candidates are from the same food group and used in at least 100 recipes.
