What each ingredient does

Cauliflowers
Forms the crisp, firm pickled pieces that hold their texture in the brine.
Cold vinegar
Provides acidity that preserves the cauliflower and gives the pickle its sharp flavor.
Coarse sea salt
Draws out moisture from the cauliflower, firming it and seasoning it throughout.
Coriander seed
Adds warm, citrusy aroma to the pickling liquor.
Turmeric
Gives the pickle its yellow color and an earthy flavor.
Mustard seed
Contributes pungent, slightly bitter flavor and aroma to the brine.

The step that matters

Scalding without boiling. Heating the cauliflower in salted water just below boiling softens it slightly while keeping it firm and helps set its color. Boiling would make it soft and mushy after pickling.
