What each ingredient does

Potatoes
Add moisture and starch, giving the bread a soft, moist crumb.
Old yeast
Produces carbon dioxide gas as it ferments, making the dough rise.
Brown sugar
Feeds the yeast and adds a mild sweetness and some moisture.

The step that matters

Stirring in the yeast when lukewarm. If the mixture is too hot, the heat can kill the yeast and the dough will not rise. If it is still hot from boiling, wait until it cools to lukewarm before adding the yeast.
