Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to build a light, tender texture and rich flavour.
Sugar
Creams with the butter to aerate the mixture and adds sweetness.
Eggs
Bind the mixture and help it set into a firm pudding when baked.
Mashed potatoes
Provide the bulk and moisture that give the pudding its body.

The step that matters

Bake until set and lightly browned. Baking until the eggs have just set gives a firm pudding; underbaking leaves it loose, while overbaking can make it dry and rubbery.
