Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bell flower apples
Supply the fruit and natural pectin that help the jelly set.
Sugar
Sweetens the jelly and helps it set firm by binding water.
Lemon
Adds acidity that brightens flavour and helps pectin set.
Apple juice
Provides the liquid base and apple flavour for the jelly.

The step that matters

Boiling the mixture until clear. Boiling concentrates the sugar and pectin so the jelly sets. Under-boiling leaves it runny, while over-boiling can make it cloudy or caramelise and turn it dark.

Swap the apple

How well each one fits the dish's main ingredients (sugar, syrup, lemon):

  1. Vanillafits better
  2. Orangefits better
  3. Limefits better
  4. Applethe original

Fit is the average pairing score against sugar, syrup, lemon. Candidates are from the same food group and used in at least 100 recipes.
