Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken and enrich the cream, while beaten whites add lightness and structure.
Lemons
Juice adds acidity and bright flavour, and the grated rind adds aroma.
Powdered sugar
Sweetens the cream and dissolves smoothly into the beaten yolks.

The step that matters

Heating the yolk mixture over low heat. Yolks thicken as they heat and can curdle or scramble if heated too fast. Gentle heat lets the mixture thicken evenly before it reaches a boil.
