Why it works: Cucumber and mustard match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 2,281 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

Prepare

  1. Peel and slice the cucumbers, then sprinkle with coarse sea salt and let them stand on a sieve for 2 hours to drain excess water.

  2. Chop the cucumbers finely and mix with the chopped onions, white mustard seed, ground mustard, ground black pepper, and black mustard seed.

Bottle

  1. Add enough wine vinegar to achieve a thick ketchup-like consistency.

  2. Fill jars with the mixture, tie them up, and seal tightly.

  3. Check the jars after a few days and add more vinegar if necessary.

What each ingredient does

Green cucumbers
Form the bulk of the mash, providing fresh crunchy texture once chopped and drained.
Coarse sea salt
Draws excess water out of the cucumbers, so the mash stays thick rather than watery.
White mustard seed
Adds sharp pungent flavour and a bit of texture to the mash.
Black mustard seed
Adds a more intense, sharper mustard heat and texture to the mash.
Wine vinegar
Provides acidity that sharpens flavour and helps preserve the mash in sealed jars.

The step that matters

Draining the cucumbers. Salting and standing the cucumbers pulls out excess water. If they are not drained well, the mash stays loose and can dilute the vinegar, weakening both texture and preservation.

Swap the onion
