Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the bulk of the batter, giving the fritters a soft, tender interior.
Egg yolks
Enrich the batter and help bind it, adding richness and a tender set when fried.
Egg whites
Whipped air-like structure that lightens the batter and helps the fritters puff.
Fine lard
Frying fat that conducts heat and browns the outside to a golden crust.

The step that matters

Beating the batter until light. Beating at length traps air in the eggs and potato mixture, which expands in the hot fat and lightens the fritters. Under-beating leaves them dense and heavy.
