Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Cream the butter and sugar together until light and fluffy.

  2. Add the remaining ingredients and mix well.

  3. Bake in layers at 350°F (175°C) until golden.

Make the filling

  1. For the filling, boil the water and sugar together for ten minutes.

  2. Stir the syrup into the beaten egg white, then add the lemon juice and grated rind.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat that makes the cake tender and rich in flavour.
Sugar
Sweetens the cake and helps the creamed butter hold air for a light crumb.
Egg white
Whipped, it adds structure and lightness to the filling.
Lemon juice
Adds acidity that brightens the sweetness of the filling.
Grated lemon rind
Adds aromatic lemon oils that scent the cake without extra liquid.

The step that matters

Stir the syrup into the beaten egg white. Adding the hot syrup gradually while the egg white is still whipped lets it cook and set the foam into a stable, glossy filling. Pouring it in all at once or letting the white deflate leaves a loose, runny result.
