What each ingredient does

Cucumbers
Form the crisp-textured body of the pickles that absorbs the brine and vinegar.
Coarse sea salt
Draws water out of the cucumbers, firming them and helping them stay crisp.
White sugar
Balances the sharpness of the vinegar and provides the sweetness of the pickles.
Vinegar
Provides the acidity that preserves the pickles and gives them their tangy flavor.
Green peppers
Add vegetable bulk and a mild, fresh bitterness that contrasts with the sweetness.

The step that matters

Pour off the brine before adding sweetener and vinegar. Salt draws water out of the cucumbers. Pouring off the brine removes excess salt, and the cucumbers must then be drained well so the vinegar and sugar mixture is not diluted and the pickles stay firm.

Swap the white pepper

How well each one fits the dish's main ingredients (cucumber, onion, pepper, sugar, vinegar):

  1. Garlicfits better
  2. Tarragonfits better
  3. Dillfits better
  4. White pepperthe original

Fit is the average pairing score against cucumber, onion, pepper, sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
