Jam Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix the milk, butter, sugar, flour, eggs, walnuts, baking powder, and lemon extract until well combined.

  3. Divide the batter into layers and bake until golden brown.

  4. For the filling, combine sugar, vinegar, and water in a saucepan and boil until it reaches a taffy consistency.

  5. Remove from heat and pour the mixture into the well-beaten egg whites, then beat until cold.

  6. Spread the filling between the layers of cake.
