What each ingredient does

Cucumbers
Form the main body of the pickle, becoming crisp-firm after salting and curing.
Coarse sea salt
Draws water out of the cucumbers, firming them and preparing them to take up brine flavour.
White sugar
Adds sweetness that balances the sharp vinegar and helps define the pickle's sweet-sour character.
Vinegar
Provides the acidity that preserves the pickles and gives them their sour bite.
Small onions
Contribute aromatic sharpness and sweetness that mellow during the long soak.

The step that matters

Pouring off the brine after salting. Salt draws water out of the cucumbers. Rinsing or skipping the pour-off leaves them overly salty, while leaving them too long can soften the texture.

Swap the white pepper

How well each one fits the dish's main ingredients (cucumber, onion, pepper, sugar, vinegar):

  1. Garlicfits better
  2. Tarragonfits better
  3. Dillfits better
  4. White pepperthe original
