Bread Pudding

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the custard

  1. Soak the bread in the milk for 2 hours.

  2. Mash the soaked bread with the back of a spoon until fine.

  3. Beat the eggs, sugar, and salt together, then add to the bread and milk mixture.

  4. Pour the mixture into a pudding dish.

Bake and serve

  1. Bake at 300°F (150°C) for 45 minutes.

  2. Check for doneness by running a knife down the center; it should not look milky.

  3. Serve with cream sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale bread
Soaks up the milk and provides the body of the pudding.
Eggs
Set when baked, binding the pudding into a soft, sliceable custard.
Sweet milk
Moistens the bread and forms the custard base that sets in the oven.
Sugar
Adds sweetness and helps the custard brown lightly at the surface.

The step that matters

Checking for doneness. Egg custard keeps setting as it cools, so underbaking leaves a runny center while overbaking can make it grainy and watery. A knife test near the center shows whether the custard has fully set.
