What each ingredient does

Potatoes
Provide the starchy body that thickens the soup when mashed.
Milk
Supplies the liquid base and creamy texture of the soup.
Onion
Adds savory aroma and sweetness as it softens in the milk.
Celery
Contributes a mild, fresh aroma to the soup base.
Butter
Adds fat for richness and a smoother mouthfeel.

The step that matters

Rubbing the mashed potatoes through a sieve. Pushing the mash through a sieve breaks up any remaining lumps and gives the soup a smooth, fine texture. Adding the hot milk first helps the potato blend evenly without seizing.
