What each ingredient does

Oysters
Provide the main flavor and tender texture, which firm up and toughen when overcooked.
Milk
Forms the creamy body of the stew and adds mild sweetness and richness.
Butter
Adds fat for richer flavor and a smoother, silkier mouthfeel.

The step that matters

Adding the oysters. Oysters cook in very little time. Once they reach a boil they firm up and shrink, becoming rubbery. Adding them last and boiling them only once keeps them tender and juicy.
