Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the custard

  1. Soak the bread in the milk for 2 hours.

  2. Mash the soaked bread with the back of a spoon until fine.

  3. Beat the eggs, sugar, and salt together, then add to the bread and milk mixture.

  4. Pour the mixture into a pudding dish.

Bake and serve

  1. Bake at 300°F (150°C) for 45 minutes.

  2. Check for doneness by running a knife down the center; it should not look milky.

  3. Serve with cream sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale bread
Soaks up the milk and gives the pudding its body as it sets.
Eggs
Set when baked, binding the bread and milk into a custard-like texture.
Sweet milk
Provides the liquid that softens the bread and forms the custard base.
Sugar
Adds sweetness and contributes to browning on the baked surface.

The step that matters

Checking for doneness. Egg custard continues to set as it cools, and underbaked centers stay runny. Checking with a knife at the center helps confirm the custard has fully set before serving.
