Beet Salad

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the beets

  1. Bake the beets in the oven at 350°F (175°C) until tender.

  2. Stand the beets in cold water for a few minutes, then peel them.

  3. Slice the beets thinly and place them in a bowl.

Assemble and serve

  1. Slice the onion thinly and mix it with the beets.

  2. Heat enough vinegar to cover the beets and season with pepper, salt, sugar, and a few whole cloves.

  3. Pour the vinegar mixture over the beets and serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beets
Form the main body of the salad and provide earthy flavor and color.
Vinegar
Provides acidity that gives the salad its sharp, tangy flavor.
Onion
Adds sharp aroma and a pungent bite that balances the sweetness of the beets.
Sugar
Balances the acidity of the vinegar with sweetness.

The step that matters

Bake the beets until fully tender. Beets that are underbaked stay firm and fibrous, and they will not slice or peel cleanly. Cooking them through softens the cell walls so the slices hold together and absorb the vinegar mixture evenly.

Swap the onion

How well each one fits the dish's main ingredients (vinegar, pepper, sugar, clove):

  1. Capsicumfits better
  2. Mustardfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against vinegar, pepper, sugar, clove. Candidates are from the same food group and used in at least 100 recipes.
