The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Wine
Provides the main flavour and liquid base of the jelly.
Cut loaf sugar
Adds sweetness and balances the acidity of the lemon juice and wine.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.

The step that matters

Dissolve the gelatine fully in boiling water. Gelatine must be completely dissolved before mixing, or undissolved granules will leave weak spots and an uneven set. Cooling the mixture before pouring into the mold helps it set evenly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, wine):

  1. Vanillafits better
  2. Applefits better
  3. Grapefits better
  4. Lemonthe original

Fit is the average pairing score against sugar, wine. Candidates are from the same food group and used in at least 100 recipes.
