Baked Apple Dumplings

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll the rich paste thin and cut it into squares.

  2. Enclose each square around a medium-sized tart apple filled with raisins, currants, chopped citron, chopped almonds, lemon peel, sugar, and cinnamon.

  3. Brush the outside with melted butter and sprinkle with brown sugar.

  4. Grease the baking pan with butter and sprinkle with ½ cup brown sugar.

  5. Place the dumplings in the pan and bake at 350°F (175°C) until done.

  6. Arrange on a platter and pour the syrup from the pan over them.
