Sponge Lemon Roll

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the sponge

  1. Preheat the oven to 350°F (175°C).

  2. Beat the whites of 5 eggs until stiff peaks form, then gradually add 1 cup of sugar while continuing to beat.

  3. Add the beaten yolks of the 5 eggs, 1 cup of sifted flour and 1 teaspoon of vanilla extract, mixing in gently.

  4. Pour the batter into a shallow pan and bake until golden.

Make the lemon filling

  1. For the lemon filling, beat the whites of 4 eggs until stiff peaks form.

  2. Add 1 cup of sugar, the yolks of the 4 eggs, grated lemon rind, and lemon juice.

  3. Cook the mixture in a double boiler until thick.

Roll and serve

  1. Turn the cake out onto a pastry board.

  2. Spread with lemon filling and roll it up.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites give the sponge its light, airy structure, while yolks add richness and set the crumb.
Sugar
Sweetens the cake and, when beaten with the whites, stabilizes the foam.
All-purpose flour
Provides the starch and gluten that give the sponge its set structure once baked.
Lemon juice
Adds acidity that brightens the filling and balances its sweetness.
Lemon rind
Contributes aromatic lemon oils that flavor the filling.

The step that matters

Beat the egg whites until stiff peaks form. Whites must be whipped to stiff peaks with sugar so they trap air; underbeaten or deflated foam gives a flat, dense sponge that may crack when rolled.
