Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Beaten into a foam that traps air, giving the frosting its light, fluffy structure.
Sugar
Boiled into syrup that sweetens the frosting and helps it set as it cools.

The step that matters

Pouring the syrup onto the egg white. The syrup must be added slowly in a thin stream while beating constantly. Pouring too fast can deflate the foam, and the hot syrup gently cooks the egg white, so it stays stable and glossy rather than runny.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
