Soups
Ingredients
Directions
Use a porcelain-lined or granite ware kettle with a close cover.
Add all pieces of meat, bones, and trimmings, both cooked and uncooked.
Cover with water and simmer to create stock.
Cool the stock rapidly after cooking to prevent souring.
For clear soup, add the whites of eggs, boil, and strain.
