What each ingredient does

Ham
Is the main cut that is cooked slowly in water until tender.
Moistened cornmeal
Covers the cut side of a half ham to help protect it during boiling.

The step that matters

Skim the surface while simmering. Foam and fat rise to the surface as the ham cooks. Skimming them off keeps the cooking liquid clearer and the ham's flavor cleaner.
