What each ingredient does

Gelatin
Sets the mixture so the sherbet holds its body when frozen and sliced.
Sweetened cream
Adds richness and a smooth, creamy texture that softens the icy bite.
Sugar
Sweetens the fruit juice and lowers the freezing point for a softer frozen texture.
Bananas
Add body and creaminess, thickening the mixture as it freezes.
Lemon juice
Adds acidity that balances the sweetness of the sugar and oranges.
Almonds
Add crunch and a nutty flavor that contrasts with the smooth base.

The step that matters

Fold in the cream just before the mixture begins to freeze. If the cream goes in too early it can be diluted or split, and if it is added too late it will not blend evenly. Timing lets the cream incorporate smoothly and keeps the frozen texture light and creamy rather than icy.

Swap the banana

How well each one fits the dish's main ingredients (lemon, orange, gelatin, raisin, almond, cream, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Cranberryfits better
  4. Bananathe original

Fit is the average pairing score against lemon, orange, gelatin, raisin, almond, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
