Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lentils
Form the body of the soup and, as they soften, give it a thick, hearty texture.
Browned flour
Thickens the soup when blended with cold water and stirred into the hot liquid.
Cream or butter
Adds richness and a smoother, silkier mouthfeel to the finished soup.

The step that matters

Thicken with the browned flour blended with a little cold water.. Flour added directly to hot liquid clumps, because its starch granules swell unevenly. Blending it first with cold water separates the particles so the soup thickens smoothly.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (lentils, cream, flour):

  1. Arrowrootfits better
  2. Kalefits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against lentils, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
