Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Cooked and pressed into a puree, they form the body and thickness of the soup.
Sweet milk
Adds liquid and creaminess, giving the soup a smooth, mellow texture.
Flour
Mixed with water and stirred in, it thickens the soup as it boils.

The step that matters

Adding the flour mixture. Flour must be mixed smoothly with a little cold water before it goes in, otherwise it clumps. Boiling then gelatinises the starch, which thickens the soup evenly.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (potato, milk, cream, flour):

  1. Chivefits better
  2. Leekfits better
  3. Arrowrootfits better
  4. Onionthe original

Fit is the average pairing score against potato, milk, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
