Potato Yeast

Why it works: Flour and sugar are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the potato starter

  1. Boil the potatoes in cold water for about 20 minutes.

  2. Tie the hops in a cloth and boil them with the potatoes.

  3. Remove the potatoes, mash them, and add flour and sugar.

  4. Pour the boiling hop water over the mixture, stirring to avoid lumps.

Ferment and store

  1. Let it cool to lukewarm, then stir in the yeast.

  2. Once fermentation has ceased, store in a cool place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide starch and body, and their cooking water helps form the starter's base.
Hops
Add bitterness and aroma, and help preserve the starter against spoilage.
Flour
Thickens the mixture and supplies starch that yeast can work on.
Sugar
Feeds the yeast, supporting fermentation and sweetness.
Lively yeast
Ferments the sugars and produces gas that leavens the bread.

The step that matters

Stir the hop water into the mixture to avoid lumps. Adding boiling liquid to flour and starch can form clumps that do not dissolve evenly. Stirring steadily as the liquid is poured disperses the starch so the starter stays smooth.

Swap the potato

How well each one fits the dish's main ingredients (hops, flour, sugar):

  1. Mustardfits better
  2. Arrowrootfits better
  3. Parsnipfits better
  4. Potatothe original

Fit is the average pairing score against hops, flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
