Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Codfish
Provides the main flaky protein and bulk of the cakes.
Potatoes
Starch binds the mixture and gives the cakes a soft, tender body.
Butter
Adds fat for richness and moisture in the mashed mixture.
Eggs
Bind the mixture so the cakes hold their shape while baking.
Pepper
Adds aroma and gentle heat to the fish and potato mixture.

The step that matters

Mash potatoes and mix with codfish, butter, eggs, and pepper.. Potatoes that are still lumpy or overworked change the texture. Mixing gently until evenly combined keeps the cakes moist and cohesive enough to form and brown without falling apart.

Swap the potato

How well each one fits the dish's main ingredients (butter, egg, pepper):

  1. Capsicumfits better
  2. Asparagusfits about as well
  3. Chivefits about as well
