Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Form the bulk of the croquette and give a soft, moist interior.
Eggs
Yolks bind the potato mixture, and the whole egg for dipping helps crumbs adhere.
Butter
Adds richness and moisture to the potato mixture.
Cooked ham
Provides the savory filling at the centre of each croquette.
Cracker crumbs
Form a crisp, browned outer crust during frying.

The step that matters

Frying in boiling lard. The lard must be hot enough to brown the crumb coating quickly. Frying too cool lets the croquette absorb grease and fall apart, while frying too long can overbrown the crust before the interior is heated through.

Swap the potato

How well each one fits the dish's main ingredients (ham, egg, butter, pepper):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Mustardfits about as well
  4. Potatothe original

Fit is the average pairing score against ham, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
