Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Form the creamy, rich filling that gives the stuffed whites their body and flavor.
Butter
Adds richness and a smooth, silky texture to both the filling and the white sauce.
Cream
Adds moisture and softness, loosening the mashed yolks into a spreadable filling.
Flour
Thickens the milk into a white sauce by absorbing liquid as it cooks.
Milk
Forms the liquid base of the white sauce, which the flour thickens into a smooth coating.

The step that matters

Stir in boiling milk until smooth and thick. Adding the boiling milk to the butter and flour mixture all at once and stirring constantly helps prevent lumps, because the starch in the flour must be dispersed before it thickens.
