What each ingredient does

Potatoes
Provide the starchy body of the dish, and their starch sets the texture as they cook.

The step that matters

Drain and serve promptly. Potatoes left in hot water keep absorbing moisture, so they turn soft and waterlogged. Draining them and letting them steam briefly drives off surface water and keeps the texture firm.
